Let Us Eat Cake! Watermelon Cake, That Is! Gluten Free. Easy. FUN!
I recently celebrated a birthday and had seen what looked to be a fun, easy and relatively healthy recipe on a raw/vegan Facebook page. We have cooking classes at my clinic, Renewed Vitality in Dallas, Texas, and I found the recipe visually appealing, and it appeared simple enough to create, so I asked my Sous Chef, Lynn, to make it. And it was fabulous!
Due to the response to the last recipe and photo we posted here for the anti-inflammatory cocktail, I thought it would be fun if we share this one here as well.

Studying Health Sciences has opened my eyes to all the benefits of what healthy eating and all around healthy lifestyle can do for one’s well-being. I consider myself a foodie and am always looking for a healthy alternative to those foods that are high in fat, sugar and sodium. I love to browse the food and drink section of Pinterest and came across the idea of a watermelon cake. I attempted to make it for my family last night for dessert and it was a hit (not to mention extremely easy)! - Lauren Feick

Ingredients:
1 whole watermelon, peeled
1/2 cup of fresh berries
For the frosting:
1 can of coconut milk (put in the fridge overnight before making the frosting)
1-2 tbsp. of powdered organic cane sugar
½ tbsp. of organic pure vanilla extract
Preparation
Be sure to put can of coconut milk in the fridge the night before you plan on making the cake. When making the frosting you just want to scoop the top white layer from the can and discard the bottom layer of liquid. Blend that top layer for 15-20 seconds on medium speed. Slowly sift in the sugar and lastly add the vanilla. Continue to blend on medium speed for about a minute. Voila! Frosting is complete.
Using a big knife cut the ends off the watermelon. You then just want to carve out the inside of the watermelon, discarding the outer skin. Once you have removed the outer green layer, you can better shape the watermelon into a more round ‘cake’ shape.
Generously frost the watermelon and place it in the fridge to firm up. Prior to serving, add the berries to garnish. As an alternative you can also add slivered almonds to the sides of the watermelon cake… yum! Serve chilled and hope you enjoy.

That's so cool that Lynn made that for you, Dr. Spurlock! My question is how hard was it to get the icing to stick? And was it really delicious as well as nutritious or were you wishing you had asked for a cake that was made with one of the many gluten-free wheat 'substitutes'. (Which, by the way, for readers, typically have a higher glycemic load and glycemic index than wheat flours or things made with wheat flour, so be cautious of that when you're regulating blood sugar as anyone who is trying to recover or manage fibromyalgia, diabetes, hypoglycemia or all the other things that have blood sugar as a major component.)

I love this recipe! Not only was it delicious and refreshing, it was not heavy nor did it make me feel sluggish. The reality of a good diet is not only that it is healthy for you, but you feel really good, .......eating it, and later, too!

They held their cooking class at Renewed Vitality that happened to synch up with Dr Spurlock's birthday, so I thought I'd add a comment here and say that over 4,000 people had viewed this recipe in the year that we've had it here. (4,189 to be exact).
